Apparently female wasps crawl inside through narrow holes and lose their wings, becoming trapped. If the fig is a male, the female wasp lays eggs inside the fig. The wasp eggs hatch into larvae and burrow out. The larvae turn into wasps and fly off with the fig pollen.
If a wasp climbs into a female fig, she pollinates it, but cannot lay eggs and just dies alone. Female figs produces enzymes which digest wasps completely so the crunchy bits you taste are not wasps, they are just tasty fig seeds.
