- Thinly slice two or three medium sized potatoes with skins 2 minutes
- Soak in salted water for 5 minutes to remove starch
- Boil in water with white vinegar to remove all starch and soften the crisps 5 minutes
- Remove and allow to Completely dry 3 minutes
- Deep fry in part vegetable oil and extra virgin oil 2:1 for 5 minutes
- Oven bake for 5 minutes
- Season with Rock Salt and Ground Pepper 2 minutes
