I have just made the most delicious Chewy Ginger nut cookies. Warm and satisfying these chewy Gingernut cookies are delicious with a cup of hot English Tea. I recommend Earl Grey slightly sweetened with a dash of milk. How to make Earl Grey
To make them you will need:
- 3/4 cup / 171 grams of butter(salted is fine just adjust salt if unsalted butter is used).
- 1 cup / 210 grams granulated sugar
- One cap or teaspoon of cinnamon syrup or similar flavouring of your choice.
Mixed these ingredients well in a bowl for three minutes or until a creamy texture is achieved. To help you should leave your butter out of the fridge at room temperature for about 20 minutes before preparing the mixture.
- Add one egg into the mix.
- Add one cap of Ginger Flour or ground ginger
- Add three scoops or 2 cups / 300 grams of regular all purpose / plain white flour
- 1 teaspoon / 5 grams of salt
- 2 teaspoons / 10 grams baking soda
- 2 teaspoons / 10 grams baking powder
- Large spoon of sticky runny honey
- 1 small cup of mixed fruit.
When you have a nice sticky dough let it settle in a refrigerator for one hour. Cover with tin foil or other non stick covering . Remove and roll the mixture thin and flat. Cut the pieces to your liking and bake for ten minutes / 12 if you prefer crispy crunchy texture and a more golden colour.
Let the cookies cool and serve with hot tea. Store in a cool dry container and eat within two days.
